Ingredients

The squash

  • 3 pounds honeynut squash

The seasoning

  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon smoked paprika
  • ½ teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 200C/400F.
  2. Clean the squash and remove the innards.
  3. Slice the squash into ¼-inch strips.
  4. Line a large baking sheet with parchment paper and spray with cooking spray.
  5. Add the slices of squash to the baking sheet and drizzle with olive oil.
  6. Add the seasonings and rub the oil over each slice of squash.
  7. Roast the squash for 20-25 minutes, flipping halfway through.
