Ingredients

The squash

  • 2 medium Delicata squash

The seasoning

  • ¼ cup Olive oil
  • ½ tbsp Garlic powder (optional)
  • ¾ tsp Sea salt
  • ¼ tsp Black pepper

Instructions

  1. Preheat the oven to 425°F (218°C) and prepare a baking sheet.
  2. Cut the ends off the squash, halve it lengthwise, and scoop out the seeds.
  3. Slice the squash into 1-inch thick half moons.
  4. Arrange the squash slices in a single layer on the baking sheet.
  5. Drizzle the squash with olive oil and season with garlic powder, salt, and pepper.
  6. Roast the squash in the oven for 25-30 minutes, flipping halfway through, until tender and browned.
