Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Prepare the squash by slicing off the stem and choosing to cut into half-moons or rings.
- For half-moons, slice lengthwise, scoop out seeds, and cut into ½" thick pieces. For rings, slice into ½" thick rounds and scoop out seeds.
- Place the sliced squash on the baking sheet, drizzle with olive oil, and sprinkle with salt. Toss to coat evenly.
- Arrange the squash in a single layer and bake for 25 to 35 minutes, flipping halfway, until tender and golden.
