Ingredients

The squash

  • 2 medium delicata squash

The seasoning

  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon fine salt

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Prepare the squash by slicing off the stem and choosing to cut into half-moons or rings.
  3. For half-moons, slice lengthwise, scoop out seeds, and cut into ½" thick pieces. For rings, slice into ½" thick rounds and scoop out seeds.
  4. Place the sliced squash on the baking sheet, drizzle with olive oil, and sprinkle with salt. Toss to coat evenly.
  5. Arrange the squash in a single layer and bake for 25 to 35 minutes, flipping halfway, until tender and golden.
