Roasted Delicata Squash

Ingredients

The squash

  • 1 whole delicata squash

The seasoning

  • 1 tsp extra virgin olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Rinse the squash under cold water.
  3. Trim the ends off each side of the squash and slice it in half lengthwise.
  4. Scoop out the stringy membranes and seeds.
  5. Lay the squash flat side down and cut it into ½ inch half moons.
  6. Place the squash on a rimmed baking sheet and season with olive oil, salt, and pepper.
  7. Toss the squash to ensure it is evenly coated with oil and seasoning.
  8. Lay the squash out on the baking sheet and roast for 12 minutes.
  9. Flip the squash and roast for another 12 minutes, checking for doneness after 8 minutes.
