Roasted Delicata Squash

Instructions
- Preheat the oven to 425°F.
- Rinse the squash under cold water.
- Trim the ends off each side of the squash and slice it in half lengthwise.
- Scoop out the stringy membranes and seeds.
- Lay the squash flat side down and cut it into ½ inch half moons.
- Place the squash on a rimmed baking sheet and season with olive oil, salt, and pepper.
- Toss the squash to ensure it is evenly coated with oil and seasoning.
- Lay the squash out on the baking sheet and roast for 12 minutes.
- Flip the squash and roast for another 12 minutes, checking for doneness after 8 minutes.
