Roasted Delicata Squash

Ingredients

The squash

  • 1 lb Delicata squash, washed

The seasoning

  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper
  • to taste cinnamon (optional)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Slice the squash in half lengthwise and scoop out the seeds.
  3. Cut each half into ½-inch thick half-moon slices.
  4. Drizzle the squash slices with olive oil and stir to coat.
  5. Place the slices on the baking sheet, leaving space between them.
  6. Sprinkle with salt, pepper, and cinnamon or desired seasonings.
  7. Bake for 10 minutes, then flip each slice and season again.
  8. Return to the oven and bake for another 10-12 minutes until tender.
  9. Serve warm.
