Roasted Delicata Squash with Tomatoes

Instructions
- Preheat the oven to 400°F.
- Line a large rimmed baking sheet with parchment paper.
- Add the squash slices, shallots, and tomatoes to the baking sheet and toss with melted ghee and bacon fat if using.
- Arrange the vegetables in a single layer and sprinkle with salt and pepper.
- Lay thyme sprigs on top or sprinkle with dried thyme.
- Bake in the preheated oven for 22-25 minutes, stirring halfway through, until tender and lightly browned.
- Remove from the oven and serve.
