Ingredients

The vegetables

  • 2 medium delicata squash
  • 1 cup grape or cherry tomatoes
  • 1 medium shallot
  • Fresh thyme leaves to taste thyme

The fats

  • Tbsp ghee
  • ½ Tbsp bacon grease

The seasonings

  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Line a large rimmed baking sheet with parchment paper.
  3. Add the squash slices, shallots, and tomatoes to the baking sheet and toss with melted ghee and bacon fat if using.
  4. Arrange the vegetables in a single layer and sprinkle with salt and pepper.
  5. Lay thyme sprigs on top or sprinkle with dried thyme.
  6. Bake in the preheated oven for 22-25 minutes, stirring halfway through, until tender and lightly browned.
  7. Remove from the oven and serve.
