Ingredients

The pesto

  • 1 cup packed fresh basil
  • 1 clove garlic
  • ΒΌ cup fresh grated parmesan cheese
  • to taste kosher salt
  • to taste black pepper
  • 3 tbsp extra virgin olive oil

The zoodles

  • 21 oz zucchini (3 medium or 4 small)
  • 1 cup heirloom grape or cherry tomatoes, halved
  • to taste kosher salt
  • to taste black pepper

Instructions

  1. Blend basil, garlic, parmesan, salt, and pepper in a food processor until smooth.
  2. Slowly add olive oil while pulsing to combine.
  3. Spiralize the zucchini and cut into smaller strands if needed.
  4. Toss zucchini noodles with pesto and halved tomatoes, seasoning with salt and pepper as necessary.
