Ingredients

Date Crust

  • cups raw walnut halves
  • 8 pieces soft dates, pitted
  • 1 tablespoon coconut oil
  • a pinch sea salt

Cheesecake Filling

  • 2 cups raw cashews, soaked for 2 hours and drained (or 1 cup raw cashew butter)
  • cup honey
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 tablespoons lemon juice
  • ¼ cup melted coconut oil

Strawberry Sauce

  • 1 cup diced strawberries
  • 3 tablespoons maple syrup

Instructions

  1. Line a 9-inch square baking dish with parchment paper.
  2. Process the walnuts until a fine, crumbly meal is formed, then add dates, coconut oil, and salt to form a sticky dough.
  3. Press the dough into the bottom of the baking dish and freeze to set.
  4. Blend the cheesecake filling ingredients until smooth, then pour over the crust and smooth the top.
  5. Blend strawberries and maple syrup until smooth, then heat in a saucepan until it thickens.
  6. Spoon the strawberry syrup over the cheesecake and swirl with a knife.
  7. Freeze until firm, at least 6 hours.
  8. Remove from the freezer, slice into bars, and keep chilled until serving.
