Ingredients

The crust

  • cups pitted Medjool dates
  • cups walnut halves/pieces
  • 1 Tbsp coconut oil
  • tsp sea salt

The filling

  • 1 cup coconut milk
  • ¾ cup raw cashew butter
  • cup freshly squeezed key lime juice
  • ¼ cup coconut oil, melted
  • ¼ cup pure grade A maple syrup
  • 1 tsp vanilla extract
  • 1 pinch sea salt

The garnish

  • 4 key limes sliced into 16 thin slices

Instructions

  1. Line an 8x8" brownie pan with parchment paper, leaving overhanging sides.
  2. In a food processor, combine all crust ingredients and pulse until well combined but still textured.
  3. Press the crust mixture evenly into the lined brownie pan.
  4. In a large bowl, whisk together all filling ingredients until smooth, ensuring they are at room temperature.
  5. Pour the filling over the crust and freeze for about 4 hours until set.
  6. Once frozen, remove from the pan using the parchment paper and place on a cutting board.
  7. Top with lime slices and slice into 16 bars using a sharp knife.
  8. Allow to sit at room temperature for 20-30 minutes before serving.
