Instructions
- Preheat the oven to 350°F.
- Line an 8×8 glass baking pan with parchment paper.
- In a food processor, chop the pecans until finely diced.
- Add melted butter, honey, cinnamon, and salt to the pecans and blend until mixed.
- In a medium bowl, mix cream cheese, sugar, and vanilla extract until smooth.
- Add greek yogurt, key lime juice, key lime zest, and egg whites to the cream cheese mixture and blend until combined.
- Pour the cheesecake mixture over the pecan crust and smooth it out.
- Bake for 30-35 minutes.
- Remove from the oven and refrigerate for 30 minutes before serving.
