Ingredients

Shortbread layer

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ¼ tsp salt
  • ¾ cup unsalted butter

Lemon layer

  • 1 ½ cups granulated sugar
  • 1 Tbsp all-purpose flour
  • 1 ½ Tbsp lemon zest
  • ½ cup lemon juice
  • 4 large eggs

Cheesecake layer

  • 2 (8 oz) pkgs. cream cheese
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream

Sour cream layer

  • 1 cup sour cream
  • 4 Tbsp powdered sugar

Instructions

  1. Preheat the oven to 350°F and butter a 13x9-inch baking dish.
  2. Prepare the shortbread layer by mixing flour, powdered sugar, and salt, then cutting in the butter until it resembles coarse meal.
  3. Press the mixture into the bottom of the baking dish and bake until set, about 15-18 minutes.
  4. For the lemon layer, whisk together sugar and flour, then add lemon zest, lemon juice, and eggs until blended.
  5. For the cheesecake layer, cream together cream cheese and sugar, mix in eggs and vanilla, then add sour cream.
  6. Pour the lemon filling over the crust, followed by the cheesecake filling, and bake until the filling jiggles slightly, about 29-33 minutes.
  7. Allow the bars to cool for 45 minutes at room temperature, then chill in the refrigerator for at least 2 hours.
  8. Prepare the sour cream layer by whisking together sour cream and powdered sugar, then spread it over the chilled bars.
  9. Cut into squares and serve.
