Instructions
- Preheat the oven to 350°F and butter a 13x9-inch baking dish.
- Prepare the shortbread layer by mixing flour, powdered sugar, and salt, then cutting in the butter until it resembles coarse meal.
- Press the mixture into the bottom of the baking dish and bake until set, about 15-18 minutes.
- For the lemon layer, whisk together sugar and flour, then add lemon zest, lemon juice, and eggs until blended.
- For the cheesecake layer, cream together cream cheese and sugar, mix in eggs and vanilla, then add sour cream.
- Pour the lemon filling over the crust, followed by the cheesecake filling, and bake until the filling jiggles slightly, about 29-33 minutes.
- Allow the bars to cool for 45 minutes at room temperature, then chill in the refrigerator for at least 2 hours.
- Prepare the sour cream layer by whisking together sour cream and powdered sugar, then spread it over the chilled bars.
- Cut into squares and serve.
