Ingredients

Shortbread Crust

  • ¼ teaspoon sea salt
  • ½ cup unsalted butter, melted
  • ½ teaspoon vanilla extract

Lemon Filling

  • 1 cup granulated sugar
  • 1 tablespoon lemon zest (optional)
  • ¼ cup all-purpose flour
  • 4 large eggs
  • ½ cup fresh lemon juice

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8-inch baking dish with grease and parchment paper.
  2. Make the shortbread crust by whisking together flour, powdered sugar, and salt, then mixing in melted butter and vanilla until a dough forms.
  3. Press the dough into the prepared pan and bake for 18 to 20 minutes until lightly browned.
  4. For the lemon filling, mix granulated sugar and lemon zest (if using), then add flour, eggs, and lemon juice, whisking until combined.
  5. Pour the filling over the hot crust and bake for another 20 to 25 minutes until set.
  6. Let the bars cool at room temperature for 1 hour, then chill in the refrigerator for 2 hours.
  7. Dust with powdered sugar, slice, and serve.
