Instructions
- Preheat the oven to 350°F and prepare an 8x8-inch baking dish with grease and parchment paper.
- Make the shortbread crust by whisking together flour, powdered sugar, and salt, then mixing in melted butter and vanilla until a dough forms.
- Press the dough into the prepared pan and bake for 18 to 20 minutes until lightly browned.
- For the lemon filling, mix granulated sugar and lemon zest (if using), then add flour, eggs, and lemon juice, whisking until combined.
- Pour the filling over the hot crust and bake for another 20 to 25 minutes until set.
- Let the bars cool at room temperature for 1 hour, then chill in the refrigerator for 2 hours.
- Dust with powdered sugar, slice, and serve.
