Ingredients

Shortbread Crust

  • 8 ounces butter
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • cups all-purpose flour

Lemon Filling

  • 6 large eggs
  • ¾ cup lemon juice
  • 2-3 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 2-2½ cups granulated sugar
  • cup all-purpose flour
  • enough for dusting powdered sugar

Instructions

  1. Preheat the oven to 350℉ (175℃) and line a 9x13 baking sheet with parchment paper.
  2. In a large bowl, mix butter, sugar, vanilla, and salt until light and creamy.
  3. Stir in flour until fully incorporated and pat the dough evenly across the bottom of the lined pan.
  4. Bake for 15-20 minutes until slightly browned.
  5. In a large bowl, whisk together eggs, lemon juice, lemon zest, and vanilla.
  6. Add sugar and flour, whisking until thoroughly combined.
  7. Pour the lemon filling over the baked crust.
  8. Return to the oven and bake for 22-25 minutes, or until the center is set.
  9. Let cool completely for about an hour, then refrigerate for 1-2 hours or overnight.
  10. Dust with powdered sugar, slice, and serve.
