Instructions
- Preheat the oven to 350℉ (175℃) and line a 9x13 baking sheet with parchment paper.
- In a large bowl, mix butter, sugar, vanilla, and salt until light and creamy.
- Stir in flour until fully incorporated and pat the dough evenly across the bottom of the lined pan.
- Bake for 15-20 minutes until slightly browned.
- In a large bowl, whisk together eggs, lemon juice, lemon zest, and vanilla.
- Add sugar and flour, whisking until thoroughly combined.
- Pour the lemon filling over the baked crust.
- Return to the oven and bake for 22-25 minutes, or until the center is set.
- Let cool completely for about an hour, then refrigerate for 1-2 hours or overnight.
- Dust with powdered sugar, slice, and serve.
