Classic Lemon Bars

Instructions
- Preheat the oven to 350°F and prepare a 9 x 13-inch baking pan with cooking spray.
- Cream the powdered sugar and cold butter until light and fluffy.
- Add 2 cups of flour and mix until the texture resembles cornmeal.
- Press the mixture into the bottom of the baking pan and bake for 15-20 minutes until golden.
- In a separate bowl, beat the eggs, sugar, and lemon juice together.
- Sift the remaining flour and baking powder into the egg mixture and mix well.
- Pour the custard over the hot crust and return to the oven to bake for another 20-25 minutes until lightly browned.
- Cool completely on a wire rack, dust with powdered sugar, cut, and serve.
