Ingredients

The crust

  • 2 cups all-purpose flour
  • ½ cup powdered sugar
  • 1 cup cold butter

The custard

  • 4 large eggs
  • 2 cups granulated sugar
  • cup fresh squeezed lemon juice
  • ½ teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F and prepare a 9 x 13-inch baking pan with cooking spray.
  2. Cream the powdered sugar and cold butter until light and fluffy.
  3. Add 2 cups of flour and mix until the texture resembles cornmeal.
  4. Press the mixture into the bottom of the baking pan and bake for 15-20 minutes until golden.
  5. In a separate bowl, beat the eggs, sugar, and lemon juice together.
  6. Sift the remaining flour and baking powder into the egg mixture and mix well.
  7. Pour the custard over the hot crust and return to the oven to bake for another 20-25 minutes until lightly browned.
  8. Cool completely on a wire rack, dust with powdered sugar, cut, and serve.
