Easy Lemon Bars

Instructions
- Preheat the oven to 350°F and line a 9x13 baking dish with parchment paper.
- In a bowl, whisk together the flour, powdered sugar, and salt.
- Add melted butter and vanilla extract to the flour mixture and mix until combined.
- Press the dough into the prepared baking pan and bake for about 20 minutes until light golden.
- Allow the crust to cool slightly on a wire rack.
- In a food processor, combine granulated sugar and lemon zest, pulsing until mixed.
- In a bowl, whisk together the lemon sugar, flour, lemon juice, and eggs until well combined.
- Pour the lemon filling over the baked crust and return to the oven, baking for 15 minutes.
- Rotate the pan and continue baking for an additional 10-12 minutes.
- Remove from the oven and cool for an hour on a wire rack, then refrigerate for at least 2 hours before slicing.
- Use a damp, sharp knife to cut the lemon bars and dust with powdered sugar before serving.
