Ingredients

The crust

  • 2 c all-purpose flour
  • ½ c powdered sugar
  • 1 c butter

The filling

  • 4 large eggs
  • ¼ c freshly-squeezed lemon juice
  • 1 tsp baking powder
  • ¼ c all-purpose flour
  • 2 c white sugar

The glaze

  • 1 c powdered sugar
  • 3 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat the oven to 350°F and lightly spray a 9x13 inch pan with cooking spray.
  2. Whisk together the flour and powdered sugar, then cut in the butter until crumbly.
  3. Press the mixture into the pan and bake for 15-20 minutes until light golden around the edges.
  4. In the last few minutes of baking, mix the eggs, lemon juice, flour, sugar, and baking powder until very pale yellow.
  5. Pour the filling over the warm crust and return to the oven for 20-25 minutes until lightly golden brown.
  6. Allow the bars to cool completely before whisking together the glaze ingredients and spreading over the bars.
  7. Refrigerate for at least 2 hours before cutting into squares to serve.
