Ingredients

Crust

  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ tsp salt
  • 2 cups all-purpose flour

Filling

  • 2 cups granulated sugar
  • 6 Tbsp all-purpose flour
  • tsp salt
  • Tbsp lemon zest
  • ¾ cup fresh lemon juice
  • ¼ cup fresh navel orange juice
  • 4 large eggs
  • 2 large egg yolks
  • 3 Tbsp heavy cream

Instructions

  1. Preheat the oven to 350°F and butter a 13 by 9-inch baking dish.
  2. For the crust, cream together butter, sugar, and salt until combined, then add flour and mix until crumbly.
  3. Press the mixture into the bottom of the prepared baking dish and bake for 20-25 minutes until lightly golden.
  4. For the filling, whisk together sugar, flour, and salt in a bowl. Mix in lemon juice, orange juice, and lemon zest shortly before the crust is done.
  5. Add eggs, egg yolks, and heavy cream to the filling mixture and whisk until well blended.
  6. Pour the filling over the hot crust, reduce the oven temperature to 325°F, and bake for another 20-25 minutes until set.
  7. Allow to cool at room temperature for 1 hour, then chill in the refrigerator for 2 hours or overnight.
  8. Cut into squares and dust with powdered sugar before serving.
