Instructions
- Preheat the oven to 350°F and grease an 8x8-inch baking pan.
- Pulse the crust ingredients in a food processor until crumbly.
- Press the mixture into the bottom of the prepared pan and bake for 20 to 22 minutes until lightly browned.
- Let the crust cool for at least 15 minutes.
- In a mixer, beat together the cream cheese, Greek yogurt, and sugar until smooth.
- Add the eggs and mix until blended, then add lemon juice, cornstarch, vanilla, and remaining lemon zest.
- Pour the cream cheese mixture over the cooled crust and spread evenly.
- Bake for 28 to 32 minutes until set, then cool on a wire rack for 1 hour.
- Chill for 4 to 8 hours, cut into bars, and serve.
