Ingredients

The crust

  • ½ cup whole wheat pastry flour
  • ¼ cup all-purpose flour
  • ¼ cup powdered sugar
  • ¼ teaspoon lemon zest
  • teaspoon kosher salt
  • 6 tablespoons cold unsalted butter

The filling

  • 16 ounces light cream cheese
  • ½ cup granulated sugar
  • 2 teaspoons cornstarch
  • ¼ cup plain non-fat Greek yogurt
  • 2 large eggs
  • 1 large egg yolk
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon lemon zest
  • ¼ teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease an 8x8-inch baking pan.
  2. Pulse the crust ingredients in a food processor until crumbly.
  3. Press the mixture into the bottom of the prepared pan and bake for 20 to 22 minutes until lightly browned.
  4. Let the crust cool for at least 15 minutes.
  5. In a mixer, beat together the cream cheese, Greek yogurt, and sugar until smooth.
  6. Add the eggs and mix until blended, then add lemon juice, cornstarch, vanilla, and remaining lemon zest.
  7. Pour the cream cheese mixture over the cooled crust and spread evenly.
  8. Bake for 28 to 32 minutes until set, then cool on a wire rack for 1 hour.
  9. Chill for 4 to 8 hours, cut into bars, and serve.
