Instructions
- Preheat the oven to 350°F.
- Mix whole wheat flour, coconut oil, maple syrup, and salt until a wet, firm dough forms.
- Line an 8x8 ceramic pan with parchment paper and press the dough evenly into the pan.
- Bake the crust for 20 minutes until fragrant and set, then let it cool.
- While the crust is baking, combine eggs, lemon zest, lemon juice, honey, salt, and coconut flour, and beat until smooth.
- Pour the filling mixture over the cooled crust and bake for 30 minutes.
- Cool completely, then chill for 4 hours before cutting into squares.
