Ingredients

The crust

  • ¾ cup whole wheat flour
  • cup coconut oil
  • ¼ cup maple syrup
  • ¼ tsp kosher salt

The filling

  • 6 large eggs
  • 4 tsp lemon zest
  • ½ cup lemon juice
  • cup honey
  • ¼ tsp kosher salt
  • 4 tsp coconut flour

Instructions

  1. Preheat the oven to 350°F.
  2. Mix whole wheat flour, coconut oil, maple syrup, and salt until a wet, firm dough forms.
  3. Line an 8x8 ceramic pan with parchment paper and press the dough evenly into the pan.
  4. Bake the crust for 20 minutes until fragrant and set, then let it cool.
  5. While the crust is baking, combine eggs, lemon zest, lemon juice, honey, salt, and coconut flour, and beat until smooth.
  6. Pour the filling mixture over the cooled crust and bake for 30 minutes.
  7. Cool completely, then chill for 4 hours before cutting into squares.
