Ingredients

The Cookie Crust

  • 6 tbsp Butter, Softened
  • ¼ cup Powdered Sugar
  • 1 cup All Purpose Flour
  • 2 tbsp Corn Starch
  • 1 tbsp Lemon Zest
  • 2 tbsp Ice Cold Water

The Filling

  • 4 large Eggs
  • cup Honey
  • cup Lemon Juice
  • 2 tbsp All Purpose Flour
  • to taste Powdered Sugar for dusting

Instructions

  1. 1. Mix the butter, powdered sugar, corn starch, flour, lemon zest, and water in a large bowl to form a dough.
  2. 2. Press the dough into a greased 8x8 inch pan and bake at 350°F for 20 minutes.
  3. 3. While the crust bakes, mix the eggs, honey, lemon juice, and flour for the filling.
  4. 4. Once the crust has cooled for 15 minutes, pour the filling over it and bake for another 20 minutes.
  5. 5. Allow the bars to cool for 30 minutes, then refrigerate for 1.5 to 2 hours before cutting into squares.
  6. 6. Dust with powdered sugar before serving.
