Healthy Lemon Bars

The filling

sugar free powdered sugar (optional, for serving)
Instructions
- Preheat the oven to 170C/325F and line an 8 x 8-inch pan with parchment paper.
- In a mixing bowl, combine all the crust ingredients until well mixed.
- Transfer the crust mixture into the lined pan and press it down to make it smooth.
- Bake the crust for 20-22 minutes until it starts to turn golden.
- While the crust is baking, prepare the filling by mixing the flour and sweetener in a bowl.
- Add the eggs and lemon juice to the flour mixture and whisk until smooth.
- Pour the lemon filling over the baked crust and spread it evenly.
- Return the pan to the oven and bake for an additional 23-25 minutes until the filling is firm.
- Let the lemon bars cool completely, then sift powdered sweetener on top.
- Refrigerate the bars for at least an hour before slicing.
