Ingredients

The Crust

  • cups super fine almond flour
  • 2 tablespoons melted coconut oil
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • teaspoon salt

The Filling

  • 4 large eggs
  • ½ cup lemon juice
  • ½ cup honey
  • 4 teaspoons coconut flour

Instructions

  1. Preheat the oven to 350ºF and line an 8-inch x 8-inch cake pan with parchment paper.
  2. Mix all crust ingredients together in a large bowl, form a ball of dough, and spread it evenly in the pan.
  3. Bake the crust for 10 minutes.
  4. While the crust is baking, whisk the filling ingredients in a medium bowl until smooth.
  5. Once the crust is done, pour the filling on top and bake for an additional 15 minutes.
  6. Turn off the oven and crack the door open, allowing the bars to cool in the oven for 15 minutes.
  7. Remove from the oven and let sit on the countertop for 20 minutes before transferring to the fridge.
  8. Chill for at least 2 hours before slicing into 9 squares.
