Instructions
- Preheat the oven to 180C/350F and line an 8x8-inch baking dish with parchment paper.
- In a mixing bowl, combine almond flour, allulose, and egg, then mix well.
- Transfer the mixture to the lined pan and press into place.
- Bake the crust for 15 minutes or until golden.
- In a separate bowl, whisk the eggs until no whites remain, then add lemon juice, allulose, and lemon zest, and whisk until smooth.
- Once the crust is done, spread the lemon filling on top and bake for 20-22 minutes until the center is firm but jiggles slightly.
- Let cool in the pan completely, then refrigerate for at least 2 hours before serving.
