Ingredients

The crust

  • 2 cups almond flour
  • 3 tablespoons allulose
  • 1 large egg

The filling

  • cup lemon juice
  • 6 large eggs
  • cup allulose
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 180C/350F and line an 8x8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine almond flour, allulose, and egg, then mix well.
  3. Transfer the mixture to the lined pan and press into place.
  4. Bake the crust for 15 minutes or until golden.
  5. In a separate bowl, whisk the eggs until no whites remain, then add lemon juice, allulose, and lemon zest, and whisk until smooth.
  6. Once the crust is done, spread the lemon filling on top and bake for 20-22 minutes until the center is firm but jiggles slightly.
  7. Let cool in the pan completely, then refrigerate for at least 2 hours before serving.
