Ingredients

Crust

  • 1 cup blanched almond flour
  • ¼ cup powdered sweetener
  • ¼ teaspoon salt
  • ½ cup butter (melted)

Filling

  • 3 lemons juice of
  • 1 lemon zested
  • 1 teaspoon vanilla extract
  • 3 eggs at room temperature
  • ¾ cup powdered sweetener
  • ¾ cup blanched almond flour

Topping

  • 1 teaspoon powdered sweetener

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a bowl, combine almond flour, powdered sweetener, and salt, then add melted butter and mix until crust forms.
  3. Line an 8x8 baking dish with parchment paper and press the crust mixture into the bottom.
  4. Bake the crust for 15 minutes and let it cool for 10 minutes.
  5. In another bowl, mix lemon juice, lemon zest, vanilla extract, and eggs until combined.
  6. Add almond flour and powdered sweetener to the mixture and blend until smooth.
  7. Pour the filling over the cooled crust and smooth it out.
  8. Bake for an additional 25 minutes.
  9. Cool for 30 minutes before slicing into 9 bars and sprinkle with powdered sweetener.
