Instructions
- Preheat the oven to 350 degrees.
- In a bowl, combine almond flour, powdered sweetener, and salt, then add melted butter and mix until crust forms.
- Line an 8x8 baking dish with parchment paper and press the crust mixture into the bottom.
- Bake the crust for 15 minutes and let it cool for 10 minutes.
- In another bowl, mix lemon juice, lemon zest, vanilla extract, and eggs until combined.
- Add almond flour and powdered sweetener to the mixture and blend until smooth.
- Pour the filling over the cooled crust and smooth it out.
- Bake for an additional 25 minutes.
- Cool for 30 minutes before slicing into 9 bars and sprinkle with powdered sweetener.
