Instructions
- Preheat the oven to 350°F (177°C) and line a 9x9 inch pan with parchment paper.
- Prepare the filling by mixing almond flour and powdered sweetener in a bowl, then whisk in eggs, lemon juice, and lemon zest until smooth.
- For the crust, combine almond flour, sweetener, and sea salt in a bowl, then stir in melted coconut oil, egg, and vanilla until crumbly.
- Press the crust mixture into the lined pan and bake for 13 to 16 minutes until firm and golden.
- Remove the crust from the oven and immediately pour the lemon filling over it.
- Return to the oven and bake for another 15 to 18 minutes until the filling is set but still soft.
- Cool completely on the counter, then refrigerate for at least 2 hours before slicing.
