Ingredients

Shortbread Crust

  • 2 ½ cups Wholesome Yum Blanched Almond Flour
  • ¼ cup Besti Monk Fruit Allulose Blend
  • ¼ tsp Sea salt
  • ¼ cup Coconut oil (or butter; melted)
  • 1 large Egg (whisked)
  • ½ tsp Vanilla extract

Lemon Filling

  • cup Besti Powdered Monk Fruit Allulose Blend
  • ¼ cup Wholesome Yum Blanched Almond Flour
  • 4 large Eggs
  • ¾ cup Lemon juice
  • 1 tbsp Lemon zest

Instructions

  1. Preheat the oven to 350°F (177°C) and line a 9x9 inch pan with parchment paper.
  2. Prepare the filling by mixing almond flour and powdered sweetener in a bowl, then whisk in eggs, lemon juice, and lemon zest until smooth.
  3. For the crust, combine almond flour, sweetener, and sea salt in a bowl, then stir in melted coconut oil, egg, and vanilla until crumbly.
  4. Press the crust mixture into the lined pan and bake for 13 to 16 minutes until firm and golden.
  5. Remove the crust from the oven and immediately pour the lemon filling over it.
  6. Return to the oven and bake for another 15 to 18 minutes until the filling is set but still soft.
  7. Cool completely on the counter, then refrigerate for at least 2 hours before slicing.
