Ingredients

The crust

  • 1 recipe Low Carb Shortbread Crust

The filling

  • 1 cup freshly squeezed lemon juice
  • ¾ cup low carb powdered sugar
  • ½ teaspoon stevia glycerite
  • 1 tablespoon cornstarch or arrowroot
  • 5 large eggs
  • 2 large egg yolks
  • 1 pinch salt

Instructions

  1. Prepare the Low Carb Shortbread Crust and bake it at 350°F for 10 minutes, then let it cool.
  2. In a medium bowl, mix the low carb powdered sugar, cornstarch, and salt with a hand mixer.
  3. Add the eggs and egg yolks to the mixture and mix thoroughly.
  4. Incorporate the lemon juice and mix until the powdered sweetener is dissolved.
  5. Pour the lemon mixture onto the cooled shortbread crust and bake for approximately 30 minutes or until the custard is just set.
