Instructions
- Prepare the Low Carb Shortbread Crust and bake it at 350°F for 10 minutes, then let it cool.
- In a medium bowl, mix the low carb powdered sugar, cornstarch, and salt with a hand mixer.
- Add the eggs and egg yolks to the mixture and mix thoroughly.
- Incorporate the lemon juice and mix until the powdered sweetener is dissolved.
- Pour the lemon mixture onto the cooled shortbread crust and bake for approximately 30 minutes or until the custard is just set.
