Ingredients

Shortbread Crust

  • 1 cup unsalted butter, melted
  • ½ cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon salt
  • 2 cups all-purpose flour
  • 2 tablespoons all-purpose flour

Lemon Filling

  • 2 cups granulated sugar
  • 6 tablespoons all-purpose flour
  • 6 large eggs
  • 1 cup lemon juice
  • optional confectioners’ sugar for dusting

Instructions

  1. Preheat the oven to 325°F (163°C) and prepare a 9x13-inch glass baking pan with parchment paper.
  2. Mix melted butter, sugar, vanilla extract, and salt in a medium bowl, then add flour and combine to form a thick dough.
  3. Press the dough into the prepared pan and bake for 20-22 minutes until lightly browned.
  4. Poke holes in the warm crust and prepare the filling by whisking together sugar, flour, eggs, and lemon juice in a large bowl.
  5. Pour the filling over the warm crust and bake for 22-26 minutes until the center is set.
  6. Cool the bars at room temperature for about 2 hours, then refrigerate for 1-2 hours before serving.
  7. Dust with confectioners’ sugar, cut into squares, and serve.
