Ingredients

The crust

  • 1 cup gluten-free flour
  • 6 tablespoons granulated sugar

  • 1 tablespoon lemon zest
  • 6 tablespoons butter, softened

The filling

  • 4 eggs
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • ½ cup fresh lemon juice
  • 1 tablespoon lemon zest

Optional toppings

  • 1 cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • 1 tablespoon lemon zest

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8-inch baking dish with parchment.
  2. Mix together the crust ingredients until crumbly, then knead until a dough forms.
  3. Press the dough into the prepared dish and bake for 5 minutes.
  4. Prepare the filling by mixing eggs, sugar, cornstarch, and lemon juice, then strain if desired.
  5. Stir in lemon zest and pour the filling over the crust, then bake for 30 minutes.
  6. Cool the bars for 15 minutes, then lift them out and cut into squares.
  7. Refrigerate for at least 1 hour before serving, topping with optional garnishes.
