Instructions
- Preheat the oven to 350°F and prepare an 8x8-inch baking dish with parchment.
- Mix together the crust ingredients until crumbly, then knead until a dough forms.
- Press the dough into the prepared dish and bake for 5 minutes.
- Prepare the filling by mixing eggs, sugar, cornstarch, and lemon juice, then strain if desired.
- Stir in lemon zest and pour the filling over the crust, then bake for 30 minutes.
- Cool the bars for 15 minutes, then lift them out and cut into squares.
- Refrigerate for at least 1 hour before serving, topping with optional garnishes.
