Instructions
- Preheat the oven to 350°F.
- Mix graham cracker crumbs, brown sugar, and melted butter in a bowl, then press into a 9-inch pie pan and bake for 8-10 minutes.
- For the lime curd, melt butter in a saucepan, then add sugar, lime juice, eggs, and salt, cooking until thickened.
- Strain the mixture to remove any cooked egg bits and stir in lime zest, then refrigerate until cool.
- For the cheesecake topping, mix cream cheese and powdered sugar until smooth, then add sour cream and lime juice.
- In a separate bowl, whip the heavy cream to stiff peaks and fold it into the cream cheese mixture.
- Spread the lime curd over the cooled crust, then dollop the cheesecake filling on top and spread evenly.
