Ingredients

The crust

  • 1 ½ cups graham cracker crumbs

The lime curd

  • ¼ cup salted butter
  • 1 cup granulated sugar
  • ½ cup fresh lime juice
  • 2 large eggs
  • 1 pinch salt
  • 1 tablespoon fresh lime zest

The white chocolate cheesecake

  • 8 ounces cream cheese
  • cup powdered sugar
  • ½ cup sour cream
  • ¼ cup fresh lime juice
  • 4 ounces white chocolate
  • 1 teaspoon fresh lime zest
  • 1 cup heavy whipping cream

Instructions

  1. Preheat the oven to 350°F.
  2. Mix graham cracker crumbs, brown sugar, and melted butter in a bowl, then press into a 9-inch pie pan and bake for 8-10 minutes.
  3. For the lime curd, melt butter in a saucepan, then add sugar, lime juice, eggs, and salt, cooking until thickened.
  4. Strain the mixture to remove any cooked egg bits and stir in lime zest, then refrigerate until cool.
  5. For the cheesecake topping, mix cream cheese and powdered sugar until smooth, then add sour cream and lime juice.
  6. In a separate bowl, whip the heavy cream to stiff peaks and fold it into the cream cheese mixture.
  7. Spread the lime curd over the cooled crust, then dollop the cheesecake filling on top and spread evenly.
  8. Chill the pie for at least 4 hours before serving, optionally garnishing with lime zest and slices.
