Ingredients

The crust

  • 9 sheets graham crackers
  • 2 ½ Tbsp granulated sugar
  • cup unsalted butter

The filling

  • 3 large egg yolks
  • 1 Tbsp lime zest
  • 1 can sweetened condensed milk
  • ½ cup strained fresh lime juice
  • ¼ cup full fat sour cream

The topping

  • ¾ cup heavy cream
  • 1 ½ Tbsp granulated sugar

Instructions

  1. Preheat the oven to 350°F.
  2. Make the crust by processing graham crackers into fine crumbs, then mixing with sugar and melted butter.
  3. Press the crust mixture into a 9-inch pie dish and bake until golden brown.
  4. Cool the crust and reduce the oven temperature to 325°F.
  5. For the filling, whisk together egg yolks and lime zest, then mix in sweetened condensed milk, lime juice, and sour cream.
  6. Let the filling rest for 15 minutes to thicken.
  7. Pour the filling into the cooled crust and bake until nearly set.
  8. Cool the pie on a wire rack, then chill in the refrigerator for 4 hours.
  9. Prepare the whipped topping by whipping heavy cream and sugar until stiff peaks form.
  10. Pipe the whipped topping onto the pie and garnish with lime wedges if desired.
