Instructions
- Preheat the oven to 350°F.
- Make the crust by processing graham crackers into fine crumbs, then mixing with sugar and melted butter.
- Press the crust mixture into a 9-inch pie dish and bake until golden brown.
- Cool the crust and reduce the oven temperature to 325°F.
- For the filling, whisk together egg yolks and lime zest, then mix in sweetened condensed milk, lime juice, and sour cream.
- Let the filling rest for 15 minutes to thicken.
- Pour the filling into the cooled crust and bake until nearly set.
- Cool the pie on a wire rack, then chill in the refrigerator for 4 hours.
- Prepare the whipped topping by whipping heavy cream and sugar until stiff peaks form.
- Pipe the whipped topping onto the pie and garnish with lime wedges if desired.
