Instructions
- Preheat the oven to 325°F.
- Whisk together egg yolks and lime zest until lightly green, then whisk in condensed milk and lime juice.
- Let the filling sit at room temperature until thickened.
- Crush graham crackers and mix with melted butter and sugar to form the crust.
- Press the crust mixture into a pie plate and bake until golden brown.
- Pour the filling into the warm crust and bake until the center is firm but still jiggly.
- Cool the pie for an hour, then refrigerate until chilled.
- Whip the cream with powdered sugar until soft peaks form and spread over the pie.
