Ingredients

The filling

The crust

  • 9 whole graham crackers
  • 5 tablespoons butter
  • 2 tablespoons granulated sugar

The topping

  • 1 cup heavy cream
  • ¼ cup powdered sugar

Instructions

  1. Preheat the oven to 325°F.
  2. Whisk together egg yolks and lime zest until lightly green, then whisk in condensed milk and lime juice.
  3. Let the filling sit at room temperature until thickened.
  4. Crush graham crackers and mix with melted butter and sugar to form the crust.
  5. Press the crust mixture into a pie plate and bake until golden brown.
  6. Pour the filling into the warm crust and bake until the center is firm but still jiggly.
  7. Cool the pie for an hour, then refrigerate until chilled.
  8. Whip the cream with powdered sugar until soft peaks form and spread over the pie.
