Ingredients

The crust

  • 11 full-sheet graham crackers
  • ½ cup salted macadamia nuts
  • 2 tablespoons granulated sugar
  • 5 tablespoons unsalted butter, melted

The filling

  • 28 ounces full-fat sweetened condensed milk
  • 1 cup key lime juice
  • 4 large egg yolks
  • 1 teaspoon key lime zest

Garnish

  • to taste lime zest
  • to taste quartered lime slices
  • to taste macadamia nuts
  • to taste whipped cream
  • to taste meringue topping

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Make the crust by pulsing graham crackers and macadamia nuts in a food processor until coarse crumbs form. Mix in sugar and melted butter, then press into a pie dish.
  3. Pre-bake the crust for 8 minutes.
  4. For the filling, whisk together sweetened condensed milk, key lime juice, egg yolks, and lime zest.
  5. Pour the filling into the warm crust and bake for 18–20 minutes until slightly jiggly in the center.
  6. Cool the pie completely on a wire rack, then refrigerate for at least 1 hour before serving.
  7. Garnish as desired before serving.
