Ingredients

The crust

  • 10 mini graham cracker crusts
  • 1 8-serving graham cracker crust (if making a large pie)

The filling

  • 5 large egg yolks
  • 1 14-oz can sweetened condensed milk
  • ½ cup freshly squeezed lime juice

For serving

  • to taste sweetened whipped cream

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, combine the egg yolks, sweetened condensed milk, and lime juice.
  3. Distribute the mixture evenly among the graham cracker crusts.
  4. Place the tart pans on a baking sheet and bake for 10-11 minutes.
  5. Remove from the oven and allow to cool to room temperature, then chill in the fridge until ready to serve.
  6. Before serving, add a dollop of sweetened whipped cream.
