Ingredients

Pie Crust

  • 2 cups graham cracker crumbs or ginger snap crumbs
  • ½ cup unsalted butter
  • 1 tbsp unsalted butter (additional)

Filling

  • 4 large egg yolks
  • 1 14 oz can sweetened condensed milk
  • ½ cup key lime juice
  • 2 tbsp key lime juice (additional)
  • 1 tbsp lime zest

Instructions

  1. Preheat the oven to 375°F.
  2. Melt the butter and mix it with the graham cracker or ginger snap crumbs until moistened.
  3. Press the crumb mixture into a pie plate to form the crust.
  4. Bake the crust for 12 minutes until the edges start to brown, then let it cool and reduce the oven temperature to 325°F.
  5. In a mixing bowl, beat the egg yolks until fluffy, then add the sweetened condensed milk and half of the lime juice, mixing for 30 seconds.
  6. Add the remaining lime juice and mix for another minute, then stir in the lime zest.
  7. Pour the filling into the cooled crust and bake at 325°F for 15-17 minutes until set.
  8. Chill in the refrigerator before serving, optionally with whipped cream.
