Ingredients

The crust

  • 12 pieces Nilla Wafers

The filling

  • 8 oz 1/3 less fat cream cheese, softened
  • 5.3 oz fat free Key Lime Greek yogurt
  • cup sugar
  • 1 large egg
  • 1 tablespoon fresh squeezed lime juice

The topping

  • 12 tablespoons light whipped cream

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin with cupcake liners.
  2. Place a Nilla Wafer in each liner, flat side down.
  3. In a bowl, mix cream cheese, yogurt, sugar, egg, and lime juice until smooth.
  4. Spoon the mixture evenly into the cupcake liners.
  5. Bake for 15-16 minutes, then cool and refrigerate for at least one hour.
  6. Before serving, top each cup with a tablespoon of whipped cream and garnish with a lime slice.
