Instructions
- Preheat the oven to 375°F and line a muffin tin with cupcake liners, placing a Nilla wafer in each.
- In a bowl, mix cream cheese, yogurt, sugar, egg, vanilla, lemon juice, and cinnamon until smooth.
- Spoon the mixture over the wafers in the liners and bake for 15-16 minutes, then cool.
- Chill the cheesecake cups in the refrigerator for at least one hour.
- In a saucepan, melt butter over medium heat, add apples, and cook for 4-5 minutes.
- Mix sugar, cornstarch, and cinnamon in a dish, then add to the apples with water and simmer until thick.
- Top each cheesecake cup with apple topping before serving.
