Easy Coconut Key Lime Pie Bars

Instructions
- Preheat the oven to 350°F and line an 8-inch x 8-inch cake pan with parchment paper.
- Mix all crust ingredients together to form a ball, then spread the dough evenly in the pan.
- Bake the crust for 8 minutes.
- While the crust is baking, whisk the eggs in a bowl and add the remaining filling ingredients, mixing until smooth.
- After 8 minutes, pour the filling over the crust and bake for an additional 18-22 minutes.
- Let the bars sit for 10 minutes after baking, then chill in the fridge for 2 hours before slicing.
- Slice into 16 squares and serve with optional toppings.
