Ingredients

The crust

  • cups almond flour, superfine
  • ¼ cup unsweetened shredded coconut
  • tablespoons coconut oil, melted
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract
  • teaspoon salt

The filling

  • 4 large eggs
  • ½ cup key lime juice (or normal lime juice)
  • ½ cup honey
  • 4 teaspoons coconut flour

Optional toppings

  • to taste Greek yogurt
  • to taste lime zest
  • to taste toasted coconut

Instructions

  1. Preheat the oven to 350°F and line an 8-inch x 8-inch cake pan with parchment paper.
  2. Mix all crust ingredients together to form a ball, then spread the dough evenly in the pan.
  3. Bake the crust for 8 minutes.
  4. While the crust is baking, whisk the eggs in a bowl and add the remaining filling ingredients, mixing until smooth.
  5. After 8 minutes, pour the filling over the crust and bake for an additional 18-22 minutes.
  6. Let the bars sit for 10 minutes after baking, then chill in the fridge for 2 hours before slicing.
  7. Slice into 16 squares and serve with optional toppings.
