Ingredients

The crust

  • 1 recipe Almond Flour Pie Crust

The filling

  • 3 cups Sugar-Free Sweetened Condensed Milk
  • 4 large Egg yolks
  • ¼ tsp Sea salt
  • ½ cup Key lime juice
  • 2 tsp Lime zest
  • ¼ cup Besti Powdered Monk Fruit Allulose Blend

Optional garnishes

  • to taste Sugar-Free Whipped Cream
  • to taste Limes (sliced thinly)

Instructions

  1. Make the sugar-free sweetened condensed milk and let it cool.
  2. Preheat the oven to 350°F (176°C).
  3. Prepare the almond flour pie crust and let it cool.
  4. In a medium bowl, whisk together the condensed milk, egg yolks, and salt until smooth.
  5. Whisk in the lime juice and lime zest until smooth.
  6. Taste the filling and adjust sweetness with Besti Powdered if needed.
  7. Pour the filling into the cooled crust and smooth the top, covering the edges with foil.
  8. Bake for 15 minutes; the filling will still be runny.
  9. Cool for 30 minutes at room temperature, then refrigerate for at least 3-4 hours until set.
