Instructions
- Toast almond flour in a skillet over medium-high heat until golden and fragrant.
- Combine toasted almond flour with cinnamon, sweetener, and salt in a pie plate.
- Mix in melted butter and press the mixture into the bottom of the pie plate to form the crust.
- Warm lime juice in the microwave for 30-45 seconds and dissolve gelatin in it.
- In a bowl, beat cream cheese, sweetener, lime zest, and Greek yogurt until smooth.
- Add the lime juice and gelatin mixture to the bowl and mix well.
- Pour the filling into the prepared crust and chill for at least 2-3 hours until set.
