Instructions
- Prepare the crust by processing graham crackers, butter, and sugar in a food processor.
- Add water and pulse until the mixture resembles coarse meal, then press into an 8-inch pie dish.
- Refrigerate the crust for 30 minutes, then preheat oven to 375°F.
- Bake the crust for 8 to 10 minutes until golden, then cool on a wire rack.
- For the filling, combine 2 tablespoons of lime juice with gelatin in a small bowl.
- Warm the remaining lime juice in the microwave and mix with the gelatin until dissolved.
- In a large bowl, mix cream cheese, yogurt, sugar, and lime zest with a hand mixer.
- Add the gelatin mixture and blend until fully incorporated, then pour into the crust.
- Chill the pie for at least 1 hour before serving.
- Garnish with key lime slices and whipped cream if desired.
