Ingredients

The crust

  • 6 sheets graham crackers
  • 3 tbsp cold whipped butter
  • 2 tbsp sugar

The filling

  • tsp gelatin
  • ½ cup key lime juice
  • 6 oz 1/3 less fat cream cheese
  • 1 cup 0% fat Stonyfield plain yogurt
  • ½ cup sugar
  • 1 tbsp grated lime zest
  • optional key lime slices for garnish
  • optional whipped cream for garnish

Instructions

  1. Prepare the crust by processing graham crackers, butter, and sugar in a food processor.
  2. Add water and pulse until the mixture resembles coarse meal, then press into an 8-inch pie dish.
  3. Refrigerate the crust for 30 minutes, then preheat oven to 375°F.
  4. Bake the crust for 8 to 10 minutes until golden, then cool on a wire rack.
  5. For the filling, combine 2 tablespoons of lime juice with gelatin in a small bowl.
  6. Warm the remaining lime juice in the microwave and mix with the gelatin until dissolved.
  7. In a large bowl, mix cream cheese, yogurt, sugar, and lime zest with a hand mixer.
  8. Add the gelatin mixture and blend until fully incorporated, then pour into the crust.
  9. Chill the pie for at least 1 hour before serving.
  10. Garnish with key lime slices and whipped cream if desired.
