Ingredients

The chicken

  • 1 lb chicken breast (skinless, boneless, cut into cubes)

The sauce

  • cup orange juice
  • tbsp coconut aminos
  • 2 tbsp apple cider vinegar
  • ½ tbsp powdered ginger
  • 1 tsp minced garlic
  • tsp all-purpose flour or arrowroot powder (for gluten-free)

Garnish

  • ¼ cup cilantro (chopped, optional)

Instructions

  1. Place chicken in the Instant Pot.
  2. Mix orange juice, zest, coconut aminos, apple cider vinegar, ginger, and garlic in a bowl, then pour into the pot.
  3. Seal the lid and cook on high pressure for 10 minutes, then do a quick release.
  4. Remove the chicken and set aside.
  5. Add flour or arrowroot powder to the liquid in the pot and mix to thicken.
  6. Return the chicken to the pot, divide onto plates, and top with cilantro if desired.
