Healthy Instant Pot Orange Chicken

Instructions
- Zest both oranges and set the zest aside.
- Mix the sauce ingredients in a bowl and pour into the Instant Pot.
- Cut chicken into cubes and add to the Instant Pot.
- Secure the lid and set to cook for 5 minutes at high pressure.
- Quick release the pressure once done.
- Remove some sauce, mix with arrowroot starch, and whisk until smooth.
- Return the sauce to the pot and sauté for 5-10 minutes until thickened.
- Sprinkle remaining orange zest over the chicken and serve with toppings.
