Ingredients

The chicken

  • 2 lbs boneless skinless chicken breasts or thighs, cut into bite-sized cubes
  • 1 tbsp arrowroot starch
  • 1 orange zest of

The orange sauce

  • ½ cup fresh squeezed orange juice
  • 1 orange zest of
  • ¼ cup coconut aminos
  • 2 tbsp sesame oil
  • ½ tsp fish sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp fresh ginger, grated

For topping

  • to taste sesame seeds (optional)
  • to taste red chili flakes (optional)
  • to taste sliced green onions (optional)

Instructions

  1. Zest both oranges and set the zest aside.
  2. Mix the sauce ingredients in a bowl and pour into the Instant Pot.
  3. Cut chicken into cubes and add to the Instant Pot.
  4. Secure the lid and set to cook for 5 minutes at high pressure.
  5. Quick release the pressure once done.
  6. Remove some sauce, mix with arrowroot starch, and whisk until smooth.
  7. Return the sauce to the pot and sauté for 5-10 minutes until thickened.
  8. Sprinkle remaining orange zest over the chicken and serve with toppings.
