Healthy Orange Chicken

The orange sauce

fresh squeezed orange juice (about 2 oranges)

fish sauce

apple cider vinegar

fresh ginger, grated
For topping

Instructions
- Mix the sauce ingredients in a bowl or jar.
- Cut the chicken into cubes and set aside.
- Combine arrowroot starch, sea salt, and pepper on a plate.
- Coat the chicken pieces with the starch mixture.
- Heat sesame oil in a large pan over medium heat.
- Add the chicken and cook until browned and cooked through, about 7-8 minutes.
- Remove the chicken and set aside.
- Lower the heat and pour the orange juice sauce into the pan, deglazing it.
- Simmer the sauce for 2-3 minutes until thickened.
- Add the chicken back into the pan and toss to coat with the sauce.
- Simmer for another 2-3 minutes before serving with optional toppings.
