Ingredients

The Chicken

  • 2 large eggs
  • ½ cup white whole wheat flour
  • 2 teaspoons garlic powder
  • teaspoon salt
  • 1 lb. boneless skinless chicken breast
  • 2 tablespoons coconut oil

The Sauce

  • cup 100% orange juice
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons honey
  • 1 teaspoon sriracha
  • 2 teaspoons cornstarch

Optional Toppings

  • to taste fresh orange zest
  • to taste sesame seeds

Instructions

  1. Prepare the orange chicken sauce by mixing orange juice, soy sauce, honey, and sriracha, then set aside.
  2. Whisk the eggs in a medium bowl until scrambled.
  3. In another bowl, mix the flour, garlic powder, and salt.
  4. Slice the chicken into bite-sized pieces, then coat each piece in the egg wash followed by the flour mixture.
  5. Heat coconut oil in a large pan over medium/high heat and cook the chicken pieces for 2-4 minutes on each side until fully cooked.
  6. Remove the chicken from the pan, then add the sauce and cornstarch, whisking until thickened.
  7. Return the chicken to the pan and toss in the sauce, seasoning with orange zest and sesame seeds.
  8. Serve with your choice of grain and veggies.
