Instructions
- Trim the chicken thighs of visible fat and cut them into 1-inch pieces.
- Place the chicken in a zip-top bag with the cornstarch and shake to coat evenly.
- In a bowl, mix the teriyaki sauce with the orange zest, orange juice, and minced jalapeno.
- Heat the avocado oil in a skillet until shimmering, then add the chicken and cook until browned, possibly in batches.
- Once the chicken is cooked through, pour the sauce over it and cook for about a minute until thickened.
- Serve with steamed broccoli and rice or quinoa, and garnish with scallions.
