Ingredients

The chicken

  • 1 pound boneless skinless chicken thighs

The sauce

  • 2 tbsp orange zest
  • ¼ cup fresh orange juice
  • ½ cup organic teriyaki sauce
  • 1 tsp jalapeno, minced
  • 1 tbsp avocado oil
  • 3 tbsp corn starch

Instructions

  1. Trim the chicken thighs of visible fat and cut them into 1-inch pieces.
  2. Place the chicken in a zip-top bag with the cornstarch and shake to coat evenly.
  3. In a bowl, mix the teriyaki sauce with the orange zest, orange juice, and minced jalapeno.
  4. Heat the avocado oil in a skillet until shimmering, then add the chicken and cook until browned, possibly in batches.
  5. Once the chicken is cooked through, pour the sauce over it and cook for about a minute until thickened.
  6. Serve with steamed broccoli and rice or quinoa, and garnish with scallions.
