Ingredients

The chicken

  • 1 lb Boneless skinless chicken breast (cut into 1-inch pieces)
  • ½ tsp Sea salt
  • ¼ tsp Black pepper
  • 2 large Eggs
  • 3 oz Pork rinds (crushed)
  • 2 tbsp Avocado oil

The orange sauce

  • 1 tbsp Avocado oil
  • 2 cloves Garlic (minced)
  • ½ cup Coconut aminos
  • ¼ cup White wine vinegar
  • 2 tbsp Orange zest
  • 2 tbsp Besti Powdered Monk Fruit Allulose Blend
  • ½ tsp Ground ginger

Instructions

  1. 1. Season the chicken with salt and pepper.
  2. 2. Whisk the eggs in a small bowl and place crushed pork rinds in another bowl.
  3. 3. Heat avocado oil in a skillet over medium-high heat.
  4. 4. Dip chicken pieces in the egg, shake off excess, and coat with pork rinds.
  5. 5. Fry chicken in batches until golden and cooked through, then keep warm.
  6. 6. In the same skillet, heat oil and sauté garlic until fragrant.
  7. 7. Add coconut aminos, vinegar, orange zest, sweetener, and ginger, scraping the pan to deglaze.
  8. 8. Bring the sauce to a boil, then simmer until thickened.
  9. 9. Return the chicken to the pan and toss to coat in the sauce.
