Instructions
- 1. Season the chicken with salt and pepper.
- 2. Whisk the eggs in a small bowl and place crushed pork rinds in another bowl.
- 3. Heat avocado oil in a skillet over medium-high heat.
- 4. Dip chicken pieces in the egg, shake off excess, and coat with pork rinds.
- 5. Fry chicken in batches until golden and cooked through, then keep warm.
- 6. In the same skillet, heat oil and sauté garlic until fragrant.
- 7. Add coconut aminos, vinegar, orange zest, sweetener, and ginger, scraping the pan to deglaze.
- 8. Bring the sauce to a boil, then simmer until thickened.
- 9. Return the chicken to the pan and toss to coat in the sauce.
