Ingredients

The Chicken

  • 1 pound boneless skinless chicken thighs or breasts, cut into 1 inch chunks
  • 1 large egg, beaten
  • 3 tablespoons baking powder
  • to taste salt and pepper

The Sauce

  • 1 tablespoon rice wine vinegar, unseasoned and unsweetened
  • 4 tablespoons water
  • 1 teaspoon sesame oil
  • 2 tablespoons soy sauce or Liquid Aminos or Coconut Aminos
  • ¼ teaspoon fresh ginger
  • 2-3 cloves garlic, minced
  • cup zero calorie sweetener
  • ¼ cup white vinegar
  • 2 tablespoons orange zest
  • ¼ teaspoon xanthan gum

Optional Garnish

  • to taste sesame seeds
  • to taste chopped green onions

Instructions

  1. In a large bowl, combine chicken chunks with beaten egg, baking powder, salt, and pepper until fully coated.
  2. For air frying, preheat the air fryer to 400°F, spray the basket with oil, and cook the chicken for 10 minutes, flipping halfway through, until it reaches 165°F.
  3. For baking, preheat the oven to 400°F, place the coated chicken on a sheet pan, and bake for 20-25 minutes, flipping halfway through, until cooked through.
  4. Meanwhile, prepare the sauce by combining all sauce ingredients (except xanthan gum) in a saucepan over medium heat and simmer for 3-4 minutes until the sweetener melts.
  5. In a small bowl, mix 2 tablespoons of the sauce with xanthan gum, stir until thickened, then add back to the saucepan and stir continuously until the sauce thickens.
  6. Coat the cooked chicken in the orange sauce and serve with optional sesame seeds and chopped green onions.
