Easy Keto Low Carb Orange Chicken

The Sauce

Instructions
- In a large bowl, combine chicken chunks with beaten egg, baking powder, salt, and pepper until fully coated.
- For air frying, preheat the air fryer to 400°F, spray the basket with oil, and cook the chicken for 10 minutes, flipping halfway through, until it reaches 165°F.
- For baking, preheat the oven to 400°F, place the coated chicken on a sheet pan, and bake for 20-25 minutes, flipping halfway through, until cooked through.
- Meanwhile, prepare the sauce by combining all sauce ingredients (except xanthan gum) in a saucepan over medium heat and simmer for 3-4 minutes until the sweetener melts.
- In a small bowl, mix 2 tablespoons of the sauce with xanthan gum, stir until thickened, then add back to the saucepan and stir continuously until the sauce thickens.
- Coat the cooked chicken in the orange sauce and serve with optional sesame seeds and chopped green onions.
