Squeaky Clean Cream of Broccoli Soup

Ingredients

The soup base

  • 1 tbsp extra-virgin olive oil
  • 1 small onion, chopped
  • 1 rib celery, chopped
  • 1 tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp ground white pepper
  • tsp celery seeds
  • 8 cups broccoli florets, divided
  • 4 cups cauliflower florets
  • 3 cups vegetable broth

The finishing touches

  • 1 cup almond milk or other non-dairy milk

Instructions

  1. Heat olive oil in a large stock pot over medium heat.
  2. Add onion, celery, salt, and pepper; cook until softened, about 3 minutes.
  3. Stir in garlic powder, onion powder, celery seeds, 7 cups of broccoli florets, cauliflower florets, and vegetable broth; cover loosely and cook until fork tender, about 8 to 10 minutes.
  4. Ladle half the soup into a blender and process until smooth; transfer to a clean container and repeat with the remaining soup.
  5. Return all processed soup to the pot; finely chop the remaining cup of broccoli florets and add to the soup along with the almond milk.
  6. Stir well, bring to a simmer over medium heat, then remove from heat and serve hot.
