Ingredients

The crab cakes

  • 2 cans crab meat
  • ½ onion minced onion
  • 1 cup almond flour
  • 1 large egg
  • ¼ cup dairy-free mayonnaise
  • 1 tablespoon lemon juice
  • teaspoon cayenne pepper

For frying

  • 1 tablespoon olive oil

Instructions

  1. Combine crab meat, minced onion, ⅓ cup of almond flour, egg, mayonnaise, lemon juice, and cayenne pepper in a bowl.
  2. Line a baking sheet with parchment paper and form the mixture into 8 patties, coating each in the remaining almond flour.
  3. Refrigerate the patties for at least 20 minutes.
  4. Heat olive oil in a non-stick skillet over medium heat.
  5. Fry the patties for 3-4 minutes on each side until golden brown.
