Ingredients

  • 3 pounds cocoyam, peeled and cleaned
  • 4-5 cups fresh spinach, chopped
  • 1 cup red oil
  • ½ cup crayfish
  • 1-1½ cups smoked fish
  • 1-1½ cups smoked turkey, cut in bite-size pieces
  • 2 teaspoons salt
  • 1 piece scotch bonnet, pierced
  • 1 teaspoon bouillon powder or Maggie
  • ½ teaspoon country onion spice (optional)

Instructions

  1. Lightly boil the smoked turkey, smoked fish, crayfish with pepper and Maggie for about 3-5 minutes, reserving the stock.
  2. Peel the cocoyam carefully, removing any spoiled spots and cut into large chunks.
  3. Grate the cocoyam using a grater or food processor until it is a coarse puree.
  4. In a large bowl, combine the grated cocoyam with the mixture of fish, spinach, red oil, crayfish, smoked turkey, stock, salt, and country onion.
  5. Prepare the plantain leaves by cleaning, cutting, and wilting them over an open flame.
  6. Place about ½-1 cup of the mixture on a plantain leaf, fold the leaves over, and seal tightly.
  7. Set up a steamer and line it with plantain leaves, then place the bundles inside and steam for about an hour.
