Instructions
- Lightly boil the smoked turkey, smoked fish, crayfish with pepper and Maggie for about 3-5 minutes, reserving the stock.
- Peel the cocoyam carefully, removing any spoiled spots and cut into large chunks.
- Grate the cocoyam using a grater or food processor until it is a coarse puree.
- In a large bowl, combine the grated cocoyam with the mixture of fish, spinach, red oil, crayfish, smoked turkey, stock, salt, and country onion.
- Prepare the plantain leaves by cleaning, cutting, and wilting them over an open flame.
- Place about ½-1 cup of the mixture on a plantain leaf, fold the leaves over, and seal tightly.
- Set up a steamer and line it with plantain leaves, then place the bundles inside and steam for about an hour.
